When I started out cooking I went looking for good ideas and since that day I’ve always had more than I could try (kind of like when you’re at a good buffet and you fill 3 plates). Some of them have taken a lot of creativity to get a good dish. I can easily get excited browsing through recipes, and I like to add more ingredients of my own than the actual recipe has.
Fortunately I don’t mind the many attempts and mistakes that it takes to get things right. At least I think I don’t; as soon as I taste the result I forget this part. I always experiment and see what I can improve; when I find a good recipe I might try it two or three ways, and when I try a classic dish I’ll look up at least 10 recipes before I start.
I started this blog to share the best recipes that I come up with, with anyone who will take them. If you don’t have a lot of cooking experience I’ll include tips to help get it right; if you do I hope to have some fresh ideas for you to try. I only publish the recipes that I would want to make regularly, and that I have made successfully. My rules for food are simple: lots of variety, bold flavors, easy to like, and good for you – so you can feel good after you eat, and not only during the meal.
I have no cooking style; I’ll cook 2-hour meals on a weeknight but one of the best results I’ve gotten is from a 20-minute recipe with 2 solid ingredients. I go to cultures with long traditions and classic dishes a lot (like Indian or Mediterranean cooking) but I’ll try anything that others are willing to share and that can be done with relatively common ingredients in North America.
